Tempeh Chili

Vegan Chili with Beer & Tempeh

Ingredients

  • 1 Pack - Tempeh
  • 1 Bottle - Dark Beer
  • 1 Large - Onion
  • 3 Cloves - Garlic
  • 2 Tbsp - Olive Oil
  • 1 Can - Red Kidney Beans
  • 1 Can - Pinto Beans
  • 1 Can - Corn
  • 1 Can - Diced Tomatoes
  • 13 Cup - Ketchup
  • 14 Cup - Hoisin Sauce
  • 1 Pack - White Mushrooms
  • 2 Tbsp - Chili Powder
  • 1 Tbsp - Cumin
  • 1 Tsp - Garlic Powder
  • Salt & Pepper

Directions

  1. In a large pot, heat oil over medium heat and cook onions for a few mins
  2. Add sliced mushrooms, crumbled tempeh, garlic and spices for ~5 mins
  3. Add beans, tomatoes, corn, ketchup, hoisin and beer and simmer for ~40 mins partially covered
  4. Serve and garnish with cilantro
